INGREDIENTS


Dressing
1/2 cup salad oil
1/2 cup sugar
1/4 cup wine vinegar
1 tbsp. soy sauce

Salad
2 pkg. Ramen noodles, uncooked
1/2 cup slivered almonds
1 cup sesame seeds
1 bunch green onions, chopped
1 head Chinese or Napa cabbage, chopped

INSTRUCTIONS

Dressing:
Mix together, shake well and chill.

Mix together Ramen noodles (break them up as much as possible), almonds and sesame seeds. Spread out on a cookie sheet and bake at 350° for approximately 10-15 minutes. Check often to make sure they don't burn.

Mix greens, noodle mix, and dressing just before serving. If made ahead, it can get soggy.

CHEF COMMENTS

A friend's mom brought this to our church's Memorial Day picnic and it was quite a hit. I've made it since then for another picnic, and people loved it!

I reduced the amount of sugar in the dressing to a scant 1/4 cup. I increased the soy sauce to about 1/4 cup. I also added snap peas for some more green crunchiness.

The salad was tangy and crunchy...a good combination. August 21, 2010
